Pecan pie cookies are a delightful treat that captures the flavors of classic pecan pie in a bite-sized cookie form. Here’s a recipe to make these delicious cookies:

For the Cookie Dough:

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

For the Pecan Pie Filling:

  • 1 cup chopped pecans
  • 1/3 cup packed brown sugar
  • 1/4 cup corn syrup (light or dark)
  • 1 large egg
  • 1/2 teaspoon vanilla extract

  1. Preheat the Oven:
  • Preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
  1. Prepare the Pecan Pie Filling:
  • In a medium-sized bowl, whisk together the chopped pecans, brown sugar, corn syrup, egg, and vanilla extract until well combined. Set this pecan pie filling aside.
  1. Prepare the Cookie Dough:
  • In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This may take a few minutes.
  1. Add Egg and Vanilla:
  • Beat in the egg yolk and vanilla extract until well incorporated.
  1. Add Dry Ingredients:
  • Gradually add the all-purpose flour and a pinch of salt to the wet mixture. Mix until the dough comes together.
  1. Form Cookie Dough Balls:
  • Take small portions of the cookie dough (about 1 tablespoon each) and roll them into balls.
  1. Make Thumbprints:
  • Place the cookie dough balls on the prepared baking sheet, spacing them a few inches apart. Use your thumb or the back of a teaspoon to make an indentation in the center of each cookie.
  1. Fill with Pecan Pie Filling:
  • Spoon a small amount of the pecan pie filling into the indentation of each cookie. Be careful not to overfill, as the filling will spread during baking.
  1. Bake:
  • Bake the cookies in the preheated oven for about 10-12 minutes or until the edges are golden brown and the pecan pie filling is set.
  1. Cool:
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  2. Enjoy your Pecan Pie Cookies:
    • Once the cookies are completely cooled, they are ready to be enjoyed. These cookies have a delightful combination of a buttery cookie base and a sweet, nutty pecan pie filling.

Pecan pie cookies are a wonderful treat for holidays, special occasions, or any time you’re craving the flavors of pecan pie in a bite-sized form.
