For the Salad:

  • 4 cups kale leaves, stems removed and chopped into bite-sized pieces
  • 2 cups red apples, diced (such as Gala or Fuji)
  • 1 cup celery, thinly sliced
  • 1/2 cup seedless grapes, halved
  • 1/2 cup chopped toasted walnuts
  • 1/4 cup red onion, finely chopped

For the Dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt or sour cream
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • Salt and black pepper, to taste


Prepare the Kale:

  1. Wash the kale leaves thoroughly and remove the tough stems. Chop the kale leaves into bite-sized pieces. You can also massage the kale leaves with a bit of olive oil to help soften them if desired.
