Honeydew & Almond Gazpacho

  • 1 honeydew melon, peeled, seeded, and diced (about 4 cups)
  • 1/2 cup blanched almonds, toasted
  • 1/2 cucumber, peeled and diced
  • 2 tablespoons fresh lime juice
  • 2 tablespoons honey (adjust to taste)
  • 1/2 cup cold water
  • 1/4 cup fresh mint leaves, plus extra for garnish
  • Salt and freshly ground black pepper, to taste
  • Extra virgin olive oil, for drizzling (optional)
  • Sliced almonds for garnish (optional)
  • Edible flowers for garnish (optional)


1. Toast the Almonds:

  1. Place the blanched almonds in a dry skillet over medium heat. Toast them, stirring occasionally, until they become golden brown and fragrant. This should take about 3-4 minutes. Be careful not to let them burn. Remove from heat and let them cool.

2. Blend the Soup:

  1. In a blender or food processor, combine the diced honeydew melon, toasted almonds, diced cucumber, fresh lime juice, honey, and cold water.
  2. Add the fresh mint leaves to the blender as well.
  3. Blend the mixture until it’s completely smooth. If the soup is too thick, you can add a little more water to reach your desired consistency.

3. Season and Chill:
