  • 2 tablespoons olive oil

  • 4 cups chopped kale (remove tough stems)
  • Juice of 1 lemon

  1. SautΓ© the Vegetables: In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. SautΓ© for about 5 minutes or until the vegetables begin to soften.
